I had been meaning to post about these artichokes forever, but I thought I had lost the pictures. I chalked it up to bad luck and forgot about them… until today. Artichokes are one of our favorite foods, but I had never really thought to try to cook them myself. Finding a huge bag of them at Costco convinced me to give it a shot. Man, these things are good. It’s definitely an “un-recipe”, though, because you don’t have to measure anything. That’s my kind of cooking right there.
Preheat your oven to 425 degrees.
Wonder at the beauty of the artichoke. Then gently spread the leaves and rinse it well, because those things are filthy.
Cut the top 1- 1/2 inches and stem off of the artichoke, and trim the sharp points off of each exposed leaf. I think it makes it prettier. Maybe?
Cut the artichoke in half, but be careful because they can be hard as freaking rocks. Pull out the purple leaves (ain’t nobody got time for them) and removed the choke (who eats fuzz?).
Slather them with garlic, lemon juice, a little olive oil, and a ton of chardonnay. Drink the rest of the bottle. That step is crucial.
Bake for about an hour or until tender.
You eat them by pulling the leaves off one at a time, holding the trimmed edge, and scraping the “meat” off with your teeth. You can eat them plain or dip them in whatever you choose. (I like to dip mine in a little butter mixed with the Garlic & Herb blend from Mrs. Dash.) When you’re done with the leaves, eat the white “meat” in the base. That’s the best flipping part! 😉
Anyway, that’s all I really have for today. In other news, though, I went to the doctor this afternoon. Waiting rooms provide plenty of entertainment, if you know where to look.
No, I didn’t actually touch that light. I know what it’s for. Ew. But I did get a steroid shot in my butt. It was super fun. Now I’m sick and my butt hurts. Here’s to hoping it helps! I’ve been taking this week off from any type of workouts. My body is all “slow down jerk!”, so I think I should listen. It seriously bums be out, though. I know it’s absolutely ridiculous, but I feel like my body goes all silly putty on me when I take a break. Totally a mental thing. Actually, maybe it’s always like silly putty and I only notice it when I’m sitting around. Hmm…
