I rarely post on the weekends, but I could not help but shout from the rooftops about all the amazing fresh food we’ve been eating at the conference this weekend.
One of my favorite ways to sneak in extra fruits and vegetables is through salads. It’s just way too easy to toss stuff together and go to town. One thing that I do try my best to do is buy the produce that’s currently in season. It’s cheaper, tastes better, and is generally what I’m craving anyway. In honor of that fact, I threw together a quick compilation of some salads that I’m dying to try soon. They are a simple way to get nutritious dinners on the table in a pinch. Plus, you only have to wash a few bowls afterwards. Huge bonus.
Question: What are some of your must-have summer produce items? Mine are definitely watermelons, tomatoes, and peaches. Not going to lie, though, I can also tear up some grilled corn like it’s going out of style.
