I haven’t been online in a while, because I’m been super busy with work. Thursday I was at school from 7 am to 8 pm. Ridiculous! I went in Friday for a teacher work day, and then when I got home the internet wasn’t workin’ for me. Lame. It all worked out, though, because instead of posting I drank cheap Moscato and watched I.Q. with Maddux and Ryne. It was a good Friday night if ya ask me. Anyway, a few people asked what Maddux was for Halloween. Check him oooout as Sammy Watkins. So funny.
I’m sorry you had to wait so long for that much adorableness. I also apologize that I waited so long to post this “recipe”. I shouldn’t even call it that, because it’s made with boxed cake mix and store bought cookies. Semi-Homemade is good enough, I guess. I made this cake for Ryne’s dad last weekend. He loves Oreos, so I decided to pack as much Oreo-ness as I could into one cake. It turned out so well!
It all started with the Oreos. I “opened” about twenty Oreos and crumbled the halves with the icing into the prepared batter of a chocolate boxed cake mix. I poured the batter into two 8 inch round pans and baked according to the directions on the box.
While my cakes were baking, I took my frustrations out on a Ziplock bag full of the twenty naked Oreo halves. I wanted to crush the cookies as finely as possible. I could have used my food processor, but I didn’t want to wash it. Plus, being destructive is fun.
Ryne butted in and wanted to show me proper form. I think he was just jealous of all the fun I was having. 😉
Once I finished crushing my cookies, I got started on the buttercream frosting. I started by creaming three sticks of softened butter. The butter had been sitting out for about thirty minutes before I got started. Don’t use cold butter, and DON’T microwave it. Seriously, just don’t.
I mixed in one cup of powdered sugar at a time until I had mixed in about 6 cups. It’s not an exact science. Just add sugar until it reaches the consistency you want. You can add a little milk if you add too much sugar, but I didn’t need to this time.
Finally, I mixed in almost all of the finely crushed Oreos. Just look at this stuff. It’s so daggum good. Yes, I ate some straight out of the mixing bowl. Chefs must taste their recipes, ya know.
Once my cakes were cool, I frosted them with a thick layer of buttercream. I don’t know about you, but if there is buttercream involved, I want a ton of it.
I sprinkled a little of the crumbs on top to be all fancy like. ‘Cause if I am anything, it’s fancy. What? You don’t agree? Fine. At least I tried!
Oh, and then moments later, after I packed the cake up, Ryne dropped it on the floor. Welcome to my life.
