This weekend flew by! I probably say that every Monday, though, huh? We were busy the entire time. We even splurged on some takeout! Yes, I use food as a reward. No, I’m not ashamed. 🙂
Maddux obviously didn’t get the work memo. He spent his weekend relaxing like a champ. He’s been a little off lately, but I can see his bottom two teeth poking through his gums. I think he’s just a little grumpy about it. He’s still sleeping, though! Hooray!
We didn’t eat takeout all weekend. Here is photographic evidence that I used my kitchen. I seriously get giddy when I have fresh produce at breakfast. GIDDY.
All of the food I ate this weekend was definitely necessary. We organized the ENTIRE house, and we still have a tiny bit to go before we’re done. We’ve always done a pretty good job of keeping the house clean, but we have done a freaking terrible job of organizing the house. We just never really got around to it when we moved in. Then all of a sudden, it bugged the crap out of me. Has that ever happened to you? Like, you are all fine and dandy until one day you wake up and think “HOLY #^%*! My life is in disarray!” I couldn’t live with it a minute longer.
We sorted through Maddux’s things and put all his “baby” stuff in the attic. Clothes sized 0-6 months, bouncy seats, and other random items had to GO. I was tired of his room being full of junk he doesn’t use. Then that spread into our closet. I took some stuff to Plato’s Closet and donated the rest. We also re-organized everything. Then we moved into the gym. We got that straightened up and then moved to the closet in the gym. The grand finale, if you will. It was AWFUL. It looked like a Hobby Lobby exploded in there. Gift bags, tissue paper, Cricut supplies, sewing machine, cloth scraps, mason jars (no, for real), ten million types of glue, various holiday decorations, etc.
I organized most of it, but I’m still not done. I need to find a really good sewing/craft table. It’s a pretty big closet, so I’m deeming it my “craft room”, which is somewhat ridiculous because I never use that stuff. I obviously need a room for all the crafts I’m not going to finish. I love that Ryne supports me in these foolish endeavors.
In addition to organizing, I made some time for meal prep. I cooked brown rice, baked sweet sweet potatoes, sauteed zucchini and yellow squash, boiled eggs, and made mmmm sauce and miso sauce. I ate about two cups of sweet potato chunks while cooking. They are flippin’ candy.
Finally, we took some time to relax. We went to my Memaw and Pop Pop’s to watch the Super Bowl. We left a little before seven to put Maddux to bed. Now that he’s doing well in his crib, I’m not trying to screw that up, ya know?
Overall it was a pretty good weekend. I didn’t have time for an “official” workout, but I also didn’t sit around on my butt. Sometimes the life/exercise balance tips over toward life. That’s definitely not a bad thing. I’ll make up for it this week. 🙂
Okay, back to meal prep. If I make brown rice and veggies over the weekend, I’m set for lunches for the week. Here is my ideal make-ahead lunch:
Into the container: Brown rice, spinach, roasted/sauteed veggies, and chickpeas. Today’s bowl was topped with miso sauce and sriracha. When you heat it up at work, the spinach wilts and the sauce mixes in with everything. SO GOOD.
Another easy make-ahead lunch is a sandwich, but they can get boring fast. This spicy avocado egg salad sandwich is anything but boring.
I just mashed two hard boiled eggs, half an avocado, lemon juice, a little sour cream, cayenne pepper, and salt together and slathered it on some toast. (I’m loving the Publix Deli bread lately, by the way.) After I snapped this picture, I added some sriracha. Took it to a whole ‘nother level.
